Process-Structure-Property relationships (S-PRO2) in food and biomaterial systems, coupling the fields of food process engineering and biomaterial sciences: This strategy is implemented in a food systems approach along the food value chain from field via factory to oro-gastro-intestinal food processing. The S-PRO2 scheme thereby represents a hierarchic multi-scale approach considering characteristic length and time scales by reverse engineering to address consumer Preference, Acceptance and Need (PAN).
